A Yummy ‘Green’ Menu to Try this Weekend

Since green is the ruling colour of 2017 according to Pantone, we thought why don’t we even eat some ‘green’ foods that are not only green in colour, but also super healthy, and of course yummy AF! The weekend is here, let’s try cooking these super easy recipes!

Breakfast

Avocado Milkshake

Avocados are happily called nutrient boosters and it’s not just without any reasons! Avocados help in high blood pressure and constipation, arthritis treatment, and are also important for pregnant women and has even been shown in studies to help you live a longer and healthier life. So what are you waiting for? Here’s the recipe, make some avocado milkshake for a delish breakfast.

Zucchini Feta Spinach Pancakes

When classic buttermilk and maple syrup just won’t do, take cakes the savoury route. (They’ll probably go better with that naturally dyed green beer too). These fritters get their colour from spinach and zucchini and are flavoured with feta, yogurt, and dill (called ‘shepu’ in Marathi and ‘savaa’ in Hindi). Eat up, here’s the recipe!

Sides, Snacks and Salads

Crispy Green Beans with Pesto

These lightly sautéed green beans go perfectly with fresh, homemade pesto. This dish is fancy enough to satisfy the foodies at a weekend brunch or get-together, and simple enough for the laziest cooks to try their hands at!  Pesto recipe, here!

Cilantro Lime Rice

Here long-grain rice is simply flavoured and given some colour with (you guessed it) fresh cilantro and lime—a versatile, flavourful side dish for any table! This tastes terrific with curries and other gravy dishes. It is a hit with kids too, as their every-day rice is in an exciting colour. Recipe, here!

Avocado Fries

Yes, you read that right. Full disclosure: This recipe calls for frying the breaded fingers of deliciousness, but we bet they would work out just as well baked. These will go perfectly with a cilantro-lemon dipping sauce, or green chutney.  You can make the dipping sauce with plain Greek yogurt instead of mayonnaise. Recipe for fries, here!

The Best Green Falafel

Falafel is one of those go-to fun foods for a drinkie afternoon meal. These little guys are full of protein- and fibre-rich chickpeas, parsley, garlic, and cilantro. Falafels are our favourites actually; these balls go well just with a dipping sauce or in a peta bread wrap. Total winners! Recipe here!

Lunch and Dinner

Avocado Mac and Cheese

This one’s sure to be a crowd-pleaser. The ultimate comfort food with a healthy twist is still just as decadent and smooth as the original, with some added nutritional benefits. Use whole-wheat pasta for even more protein and fibre. Recipe here!

Green Pizza

Even the pickiest kid ever will eat this green. Who doesn’t like pizzas, right? Just to add a little bit of green, green pizzas are a lot of fun. The base has extracts of spinach and the toppings can comprise of our favourite avocados, artichoke, and crunchy baby spinach leaves. Ditch processed cheese for this pizza and top it up with natural and fresh mozzarella, parmesan, and feta. Green pizza recipe here!

Spicy Salsa Verde Chicken

If you’ve had too much pesto chicken, try this! The green sauce for this chicken dish is packed with healthy herbs and other goodies. Basil, cilantro, parsley, and jalapeño give it colour and some kick, while a squeeze of fresh orange and lime brighten up the flavours. Find the recipe here!

Dessert

Vegan Avocado and Banana Ice Cream

Vegan treat galore! Frozen banana and avocado make up the base of this ice cream, while coconut and vanilla extract bring the sweetness. No ice cream maker needed. Find the recipe, here!

Our very own, Doodhi/Lauki ka Halwa

The only form we would devour this humble gourd, right? It is one of the best and the easiest dessert you can make at home with ingredients easily available at home. An easy recipe, here!

All the yummy food we’ve spoken about here is not only green in colour, and we are sure you’ll love it all. Most of these recipes are vegan friendly, and while we have a lot of vegan friends, do you have them too? If yes, it would be a great idea to share this with them!
